"Game On" Chili

Melissa's "Game On" Chili. If you are having your buddies over for the game or just looking for a simple meal to enjoy this recipe is sure to be a big win! This dish has a minimal prep time and is easy to cook leaving you plenty of time to enjoy your company, and the game of course!

This "Game On" Chili is a great dish to kick off the season with. Just throw it in a crockpot and its ready when you are. We all know that snacking goes on all day when it's game day! 10 minute prep time/ 50 minute cook time.

Ingredients
  • 2 slices bacon (chopped)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1/2 pound ground beef
  • 1 12-ounce bottle beer
  • 3 cups black beans
  • 2 14-ounces cans tomato sauce
  • 1 14-ounce can tomatoes (crushed)
  • 2-1/2 tablespoons chili powder
  • 1 teaspoon red pepper flakes (crushed)
  • 1 teaspoon cocoa powder
  • add kosher salt
  • add sour cream (for garnish)
  • add Grated Cheddar (for garnish)
  • add scallions (chopped, for garnish)
  • Salt and pepper to taste
Preparation

In a large saucepan or crockpot, cook the bacon over medium heat until the fat renders and the bacon is cooked (about 5 minutes). Add the onion and cook until the onion softens (about 5 more minutes). Add garlic and simmer (about 1 minute). Add beef and cook until it is no longer pink. Raise the heat to medium-high, deglaze with the beer, and allow to bubble and boil (about 2-3 minutes). Add beans, tomato sauce, crushed tomatoes, chili powder, red pepper flakes, cocoa, and salt. Stir and combine well. Simmer for 30 minutes or more. Serve with sour cream, shredded cheese, and chopped scallions if desired. You can also serve it over a baked potato or with tortilla chips!
